Soft & Fluffy Milky Doughnuts

These homemade milky doughnuts are light, soft, and perfectly golden with a delicious vanilla glaze. They make a wonderful breakfast treat or afternoon snack.

Ingredients

For the Dough

  • 500 g all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon instant or active dry yeast
  • ½ teaspoon ground nutmeg (optional)
  • 1 teaspoon salt
  • 1 large egg
  • 50 g unsalted butter, melted
  • 1 cup warm water (about 110°F/43°C)

For the Milk Glaze

  • 2 cups powdered sugar
  • 3–4 tablespoons warm milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter (optional)

Step 1: Activate the Yeast

  1. Pour the warm water into a small bowl.
  2. Add the sugar and yeast.
  3. Stir gently.
  4. Let it sit for 5–10 minutes until the mixture becomes foamy.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, combine:
    • Flour
    • Salt
    • Nutmeg
  2. Mix well.

Step 3: Make the Dough

  1. Add the egg to the flour mixture.
  2. Pour in the activated yeast mixture.
  3. Add the melted butter.
  4. Mix until a shaggy dough forms.

Step 4: Knead the Dough

  1. Transfer the dough to a lightly floured surface.
  2. Knead for 8–10 minutes until smooth, soft, and elastic.
  3. If the dough feels sticky, sprinkle in a little flour, one tablespoon at a time.

Step 5: First Rise

  1. Lightly grease a large bowl.
  2. Place the dough inside and cover with a clean towel or plastic wrap.
  3. Let it rise in a warm place for 1 hour, or until doubled in size.

Step 6: Shape the Doughnuts

  1. Punch down the risen dough.
  2. Roll it out to about ½ inch (1.3 cm) thick.
  3. Cut circles using a doughnut cutter or two round cutters.
  4. Cut out the center holes.

Step 7: Second Rise

  1. Arrange the doughnuts on a parchment-lined tray.
  2. Cover lightly.
  3. Let them rise for 20–30 minutes until puffy.

Step 8: Fry the Doughnuts

  1. Heat vegetable oil to 350°F (175°C).
  2. Carefully fry 2–3 doughnuts at a time.
  3. Cook for 1–2 minutes per side, until evenly golden brown.
  4. Remove with a slotted spoon.

Step 9: Drain

  1. Place the fried doughnuts on a wire rack or paper towels.
  2. Allow them to cool for about 5 minutes before glazing.

Step 10: Make the Milk Glaze

  1. Whisk together:
    • Powdered sugar
    • Warm milk
    • Vanilla extract
    • Melted butter (optional)
  2. Stir until smooth. Add a little more milk if needed for a thinner glaze.

Step 11: Glaze the Doughnuts

  1. Dip each warm doughnut into the glaze.
  2. Let the excess drip off.
  3. Place on a wire rack for 10–15 minutes until the glaze sets.

Step 12: Serve
