Tomato and Herby Bean Salad

1. Prep the Ingredients

Chop the large tomatoes into bite-sized chunks.

Slice cherry tomatoes in half.

Thinly slice the red onion and finely chop the shallot.

Finely slice the chilli and mince the garlic.

Roughly tear basil leaves and chop parsley.

2. Make the Dressing

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, and lemon juice.

Season with salt and black pepper to taste.

3. Assemble the Salad

In a large bowl, combine tomatoes, white beans, onion, shallot, chilli, garlic, capers, basil, and parsley.

Pour over the dressing and toss gently to combine.

4. Finish

Let the salad sit for 5–10 minutes so the flavors develop.

Top with the boiled egg.

Drizzle a little extra olive oil over the top
