Step 1: Make the Dough
- In a bowl, mix warm water + sugar + yeast.
- Let sit 5–10 minutes until foamy.
- Add flour, salt, and olive oil.
- Knead 8–10 minutes until smooth and elastic.
- Cover and let rise 1 hour (until doubled).
Step 2: Prepare the Sauce
- Mix all sauce ingredients in a bowl.
- Let sit while dough rises (this improves flavor).
Step 3: Preheat Oven
- Preheat to 230°C (450°F).
- If using a pizza stone, heat it for 20–30 minutes.
Step 4: Shape & Assemble
- Punch down dough.
- Roll into a circle (not too thin).
- Transfer to baking tray or hot stone.
- Spread a thin layer of sauce.
- Add generous mozzarella.
- Add extra cheese on top for golden bubbles.
Tip: Don’t overload sauce — cheese should shine!
Step 5: Bake
- Bake 12–15 minutes until:
- Cheese is bubbly
- Top is golden brown
- Edges are crispy
Optional: Broil 1–2 minutes for extra browning.
Step 6: Rest & Slice
- Let rest 3 minutes before slicing.
