4 fresh salmon fillets

Produce

3 garlic cloves (minced)

1 lemon (juiced or sliced)

2 tbsp fresh parsley (chopped)

1/3 cup sun-dried tomatoes (chopped)

Condiments

2 tbsp capers

Seasoning

1/2 tsp salt

1/2 tsp freshly cracked black pepper

Oils

2 tbsp olive oil

Dairy

1/2 cup feta cheese (crumbled)

1/2 cup heavy cream

Instructions
1. Preheat oven

Preheat your oven to 200°C (400°F).

2. Prepare the salmon

Place salmon fillets in a baking dish

Drizzle with olive oil

Season with salt and black pepper

Squeeze some lemon juice over the top

3. Make the sauce

In a bowl, combine:

minced garlic

sun-dried tomatoes

capers

heavy cream

half of the parsley

Mix well.

4. Assemble

Spoon the mixture evenly over the salmon

Sprinkle feta cheese on top

5. Bake

Bake for 15–18 minutes until salmon is cooked through and flakes easily

6. Finish

Sprinkle remaining parsley

Add extra lemon juice if desired
