1. Prep the Oven & Pan
Preheat oven to 180°C (350°F).
Grease a loaf pan or line it with baking paper.
2. Prepare the Zucchini
Grate the zucchini and squeeze out excess moisture using a clean towel or paper towels.
This step helps prevent the bread from becoming too wet.
3. Mix Wet Ingredients
In a large bowl, whisk together eggs and olive oil until well combined.
Stir in the grated zucchini and oregano.
4. Combine Dry Ingredients
In a separate bowl, mix flour, baking powder, baking soda, salt, and black pepper.
5. Make the Batter
Gradually add the dry ingredients into the wet mixture.
Stir until just combined (do not overmix).
Fold in the shredded cheese.
6. Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool
Let the bread cool in the pan for about 10 minutes.
Transfer to a wire rack to cool completely before slicing.
