Shaved Rainbow Carrot Sesame Salad

1. Prepare the carrots

Peel the carrots, then use a vegetable peeler to shave them into thin ribbons.

Place the ribbons in a large mixing bowl.

2. Add herbs

Add chopped basil, cilantro, and sliced scallions to the bowl with the carrots.

3. Make the dressing

In a small bowl, whisk together:

Sesame oil

Soy sauce

Rice vinegar

Honey

Ginger

Mix until well combined.

4. Toss the salad

Pour the dressing over the carrot mixture.

Toss gently until everything is evenly coated.

5. Rest & serve

Let the salad sit for 5–10 minutes to absorb the flavors.
