Prep the vegetables<\/p>\n\n\n\n<p>Preheat your oven to 200\u00b0C (400\u00b0F).<\/p>\n\n\n\n<p>Peel the beets and sweet potatoes.<\/p>\n\n\n\n<p>Slice both into even rounds (about 0.5 cm \/ \u00bc inch thick).<\/p>\n\n\n\n<p>2. Roast<\/p>\n\n\n\n<p>Place slices on a lined baking tray.<\/p>\n\n\n\n<p>Drizzle with olive oil and season with salt and pepper.<\/p>\n\n\n\n<p>Toss lightly to coat.<\/p>\n\n\n\n<p>Roast for 25\u201330 minutes, flipping halfway, until tender and slightly caramelized.<\/p>\n\n\n\n<p>3. Assemble the stacks<\/p>\n\n\n\n<p>On a serving plate, start layering:<\/p>\n\n\n\n<p>Sweet potato slice<\/p>\n\n\n\n<p>Beet slice<\/p>\n\n\n\n<p>Small spoon of pesto<\/p>\n\n\n\n<p>Repeat to create small stacks (2\u20133 layers each).<\/p>\n\n\n\n<p>4. Add burrata<\/p>\n\n\n\n<p>Tear the burrata into pieces and place over the stacks.<\/p>\n\n\n\n<p>5.
